Introduction

Baked Feta & Chickpeas is one of those wonderfully effortless Greek-inspired dishes that delivers maximum flavour with minimal work. With creamy feta, tender chickpeas, tomatoes, herbs, and a drizzle of golden olive oil, this recipe transforms basic pantry ingredients into a warm, satisfying, and protein-rich meal.

It’s perfect as a light main, a side dish, or even served alongside crusty bread for a simple Mediterranean lunch. Healthy, comforting, and bursting with Greek flavours, this dish is a must-try for any busy home cook.

Instructions

1. Preheat oven:

    • Set your oven to 200°C (390°F).

2. Prepare the vegetables:

    • Add chickpeas, cherry tomatoes, onion, garlic, and red pepper to your baking dish.

3. Season:

    • Stir in the olive oil, oregano, thyme, paprika, salt, pepper, tomato paste, and lemon juice. Mix well so everything is coated.

4. Add feta:

    • Place the block of feta in the centre of the tray, nestling it among the chickpeas.

5. Bake:

    • Cook for 25–30 minutes, until the feta softens and the tomatoes begin to caramelise.

6. Serve:

    • Sprinkle with parsley, drizzle with olive oil, and enjoy warm with bread, rice, or a fresh salad.

Tips

  • Add spinach in the last 5 minutes for extra greens.
  • For a spicy version, add chilli flakes before baking.
  • Use high-quality Greek feta, it melts beautifully and gives the best flavour.
  • This dish reheats well and makes a great meal prep option.
