Introduction
Flaounes are traditional Cypriot pastries typically prepared for Easter. These cheese-filled pastries are rich and flavourful, combining salty cheese with aromatic herbs and spices, all encased in a golden, sesame-seed-encrusted dough. Flaounes are beloved for their unique taste and texture, making them a festive treat that's also great for breakfast or a snack.
Instructions
1. Prepare the Dough:

- In a large mixing bowl, combine the flour, instant yeast, baking powder, sugar, and salt.
- Add the melted butter, warm milk, and eggs. Mix until a soft dough forms.
- Knead the dough on a lightly floured surface for about 5-7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover with a clean towel, and let it rise for about 1-2 hours or until doubled in size.
2. Prepare the Filling:

- In a separate bowl, combine the grated halloumi, anari, and kefalotyri cheeses.
- Add the mint, raisins (if using), crushed masticha, ground mahleb (if using), and beaten eggs.
- Mix thoroughly until all ingredients are well combined. The mixture should be thick and sticky.
3. Assemble the Flaounes:

- Preheat your oven to 350°F (180°C) and line baking sheets with parchment paper.
- Divide the dough into small balls, about the size of a lemon.
- Roll each ball out into a 5-6 inch (12-15 cm) circle.
- Place a heaping tablespoon of the cheese filling in the center of each dough circle.
- Fold the edges of the dough over the filling to create a square or triangle shape, leaving the center of the filling exposed.
- Brush the dough with the egg wash and sprinkle with sesame seeds.
4. Bake the Flaounes:

- Place the flaounes on the prepared baking sheets, leaving a little space between each one.
- Bake in the preheated oven for 25-30 minutes, or until the flaounes are golden brown and the filling is set.
5. Cool and Serve:

- Allow the flaounes to cool slightly on the baking sheets before transferring them to a wire rack to cool completely.
Tips
- Cheese Selection: If you can't find the traditional Cypriot cheeses, substitute with a mixture of ricotta, feta, and a hard, salty cheese like Pecorino Romano.
- Freezing: Flaounes freeze well. After they have cooled completely, store them in an airtight container or freezer bag for up to 3 months. Reheat in the oven before serving.
- Shape Variations: Flaounes can be shaped into squares, triangles, or half-moons. Choose the shape that works best for you.
