Lamb Souvlaki is a rich, traditional Greek dish featuring tender cubes of marinated lamb grilled on skewers. Known for its deep, savoury flavour and perfect pairing with lemon, oregano, and garlic, it’s ideal for a summer barbecue or a hearty family meal.
Instructions
1. Marinate the lamb:

- In a bowl, mix olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper. Add lamb cubes and toss well. Cover and refrigerate for at least 2–4 hours (or overnight for best flavour).
2. Prepare skewers:

- Thread the marinated lamb onto skewers.

- Preheat grill pan or BBQ to medium-high. Grill lamb skewers for about 20 minutes, turning occasionally, until browned on the outside and tender inside.

Tips
- Lamb shoulder offers more fat and flavour, but leg is leaner.
- Don’t overcook—lamb should stay juicy and slightly pink in the centre.
- Add red onion or pepper chunks to the skewers for a colourful twist.
- Great with lemon roasted potatoes or a Greek village salad.
