Pork Souvlaki is a cornerstone of Greek street food—succulent pork cubes marinated in olive oil, lemon juice, garlic, and oregano, then grilled to perfection. Served with warm pita, tzatziki, and salad, it’s a satisfying and flavourful meal that’s easy to prepare.
Instructions
1. Marinate the pork:

- Combine olive oil, lemon juice, vinegar, garlic, oregano, salt, and pepper in a bowl. Add pork cubes and toss to coat. Cover and marinate in the fridge for 2–4 hours (or overnight).
2. Thread the skewers:

- Remove pork from marinade and thread onto skewers.
3. Grill:

- Heat grill or BBQ to medium-high. Grill skewers for around 20 minutes, turning to brown all sides evenly.

Tips
- Pork shoulder is ideal due to its marbling, it stays juicy on the grill.
- For a lighter version, use pork loin (but take care not to overcook).

- Serve with lemon wedges and a simple Greek salad for a complete meal.
