Instructions
1. Prepare the shrimp:
-
- Toss shrimp with olive oil, salt, pepper, and smoked paprika. Set aside.
2. Cook the aromatics:
-
- Heat olive oil in a saganaki pan. Add onions and cook 3–4 minutes until soft.
- Add garlic, chilli, chilli flakes, smoked paprika, and cumin. Sauté for 1 minute.
3. Add tomatoes:
-
- Stir in chopped tomatoes, tomato paste, and sugar. Season with salt and pepper.
- Simmer for 10 minutes until slightly thickened.
- *Optional:* Add a splash of ouzo and let it bubble for 1 minute.
4. Add the shrimp:
-
- Nestle shrimp into the sauce and cook for 3–4 minutes per side until pink and cooked through.
5. Add feta:
-
- Scatter feta over the top. Let it soften and melt slightly into the sauce.
6. Serve:
-
- Remove from heat and garnish with fresh parsley.
- Enjoy with crusty bread, pita, or rice.
Tips
- Don’t overcook the shrimp — they turn rubbery if left too long.
- Add extra chilli flakes for a real kick.
- Use firm Greek feta for best results.
- A drizzle of olive oil before serving enhances richness.
- Pairs beautifully with ouzo or white wine.
