Ingredients

  • 800g boneless, skinless chicken breast or thighs, cut into 2–3 cm cubes
  • 3 tbsp olive oil
  • Juice of 1 lemon
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp freshly ground black pepper
  • Optional:1/2 tsp paprika or chili flakes for a kick
  • Wooden or metal skewers

Introduction

Chicken Souvlaki is a lighter take on the classic Greek skewers, using marinated chicken breast or thigh. It’s juicy, zesty, and perfect for grilling. Whether served with pita, salad, or rice, it’s a family favorite packed with Mediterranean flavor.

Instructions

1. Marinate the pork:

    • Combine olive oil, lemon juice, garlic, oregano, salt, pepper, and optional paprika in a bowl. Add chicken and coat well. Cover and refrigerate for at least 1 hour (up to overnight).

2. Prepare the skewers:

    • Thread the chicken pieces onto skewers.

3. Grill:

    • Heat grill pan or BBQ over medium-high heat. Grill skewers for 8–10 minutes, turning occasionally, until golden and cooked through.

4. Serve:

    • Serve hot with warm pita, tzatziki, and salad.

Tips

  • Chicken thighs give a juicier result than breast meat.
  • Make a double batch and freeze extra skewers before cooking.
  • Serve with lemon wedges for an extra citrus burst.
